Mum’s Homemade Granola.

My mum has always been an inspiration when it comes to cooking. All of her dishes are full of love and flavor and it is always a joy eating them. Carlotta and I went home a couple of days ago and have been welcomed with great coffee and a homemade apricot cake with glaze! Mum later surprised us with all the ingredients for her famous granola and we decided to prepare it all together. It was such a fun afternoon in the kitchen and we knew we had to share this simple but extremely delicious recipe with you guys! Thank you so much Mum for sharing it with us!

You need.

500 grams of oatmeal ( rolled oats ).  100 grams of coconut flakes. 200 grams of sliced almonds. 200 grams of unsalted peanuts or walnuts. ½ cup vegetable oil ( sunflower oil). 250 grams of liquid honey. 1/3 cup water. ( You can also add dried fruits like cranberries or raisins).

That’s how.

Preheat oven to 200°C (~ 390°F ). Mix all of the dry ingredients together. Add Oil.  Mix again.  Add honey. Mix well so everything combines perfectly. Add water. Mix again.  Line two baking trays with baking paper and put the mixture on the trays. Place in the oven and bake for about 20 minutes until the granola is lightly brown. Mix the mixture a couple of times while in the oven. Let it cool down slowly! Done and ready to enjoy!

Extra tip: The best way to enjoy this delicious and healthy granola is by adding some yogurt or milk and some fresh fruits. It’s the perfect start into the day.
