When the days get shorter and it starts to get cold outside, it is time for some warm food that feeds your heart. To me, such soul food has always been this ridiculously yummy potatoe soup. It provides you with warmth, a delightful aroma and cheers you up immediately.
You need: 50 ml Olive Oil. 1 Onion, chopped. 2 Carrots, peeled and diced. 1/2 Knob celery, peeled and diced. 750 grams Floury potatoes, peeled and diced. 1.5 litres Bouillon. 250 ml Single cream. 4 Wiener sausages, thinly sliced. Salt. Pepper. Parsley.
- Preheat a pot over medium heat, then add the oil. Sauté onions until slightly browned.
- Add carrots, celery and potatoes. Let it cook for about 5 minutes. Add bouillon and let simmer until everything is tender. ( Takes 15 to 20 minutes)
- Use a stick blender to blend the soup.
- Stir parsley, salt, black pepper and wiener sausages into soup.
- Stir cream.
- BE HAPPY.
