As some of you may know and I’ve mentioned dozens of times before, I love puff pastry. Such a delicious, light ( at least it feels that way) and versatile ingredient. Today I want to share a super easy but equally yummy snack: Caprese Bites.
[You need: Puff Pastry, fresh tomatoes, mozzarella, basil, salt and pepper. Slice the tomatoes and the mozzarella cheese. I didn’t have fresh basil, so I used scallions.]
[Heat the oven to 220°C/420°F. Grease a muffin pan. Cut the puff pastry in 12 squares and press the squares into 12 muffin-pan cups.]
[How to fill the pastries: Stock up tomatoe slices with mozzarella cheese, basil, salt and pepper between each slices. And again: Mozzarella, tomatoe, basil, salt and pepper…]
[Bake for 14 minutes or until the pastries are golden brown.]
[Enjoy immediately with a fresh green salad.]
